Red Velvet Crinkle Cookies

Ingredients

for 20 cookies

  • 1 (15.25-ounce) package red velvet cake mix
  • 6 tablespoons melted unsalted butter
  • 2 large eggs
  • ½ teaspoon lemon zest, optional
  • ½ cup powdered sugar
  • ½ tablespoon cornstarch

Preparation

  1. Preheat your oven to 380°F (around 190°C). Line a baking sheet with greased parchment paper.
  2. In a large bowl, stir together the cake mix, butter, eggs, and lemon zest if using. Set aside.
  3. In a bowl, stir together the powdered sugar and cornstarch.
  4. Scoop the cake mix batter into desired ball shape using a 1-inch scooper, and toss balls in the powdered sugar mixture.
  5. Working in 2 batches, arrange the balls about 3 inches apart on the prepared baking sheet. Bake for about 12 minutes per batch, or until fully cooked through and flattened about half the height. Let cool for 10 minutes.
